What You’ll Need

  • 1 1/4 pounds sea scallops (preferably fresh, dry-packed)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 3 tablespoons butter
  • 1 teaspoon minced garlic
  • 2 teaspoons lemon juice
  • 2 teaspoons chopped fresh herbs (like parsley, chives, or a mix)
  • Lemon wedges for garnish

Instructions

  1. Prep the Scallops: Pat the scallops very dry with paper towels—this is the key to a good sear! Season both sides generously with salt and pepper.
  2. Sear: Heat the olive oil in a heavy skillet (like cast iron) over high heat until it’s just starting to smoke. Place the scallops in a single layer and cook for 2 to 3 minutes per side until they have a beautiful golden-brown crust.
  3. Make the Sauce: Remove the scallops from the pan and set them aside. Reduce the heat to low. Add the butter to the pan and let it melt. Stir in the minced garlic and cook for just 30 seconds.
  4. Finish: Stir in the lemon juice and chopped herbs. Return the scallops to the pan and spoon the sauce over the top.
  5. Serve: Garnish with extra fresh herbs and lemon wedges. Serve immediately.
